You need to know how to boil water to make it safe to drink. And, more important, you must know the reasons why. Water makes life go around. The water of rivers, streams and lakes is called fresh water. Deep aquifers underground hold ancient fossil water, which is really unique and pure. A salty version is in the ocean. A similar salty version is in your blood, which pumps through your heart and motors you along in your life. Once upon a time much of our water was clean. I remember drinking from streams and slate-lined wells. “Clean” for water means that it is made up of only two things, oxygen and hydrogen. Nothing else. All the stuff that goes down the toilet, all the stuff that gets put into the air and all the stuff that gets cut down with the forests, ends up in water. After three minutes of boiling, turn off the element and let the water cool down for use in drinking or cooking or brushing your teeth. Boiling water like this causes the molecular structure of the water to rub itself together as if it were washing itself. All the filth gets dropped to the bottom of the kettle into a solid known as a precipitate. Sometimes this precipitate is white and caked, a chemical called calcium carbonate from hard water. It is fairly harmless. Sometimes the calcium is stained a brown colour, which means that there is iron in the precipitate. Throw away these droppings in the bottom of the kettle.
